About The Chef

Ju-I (Joo-Ee) is a private chef and a longtime lover of delicious food. Starting with techniques she learned from her father in their home kitchen to formal training at the now-defunct Tsubasa, she has always been a life long student of the culinary arts.

For the last decade, Ju-I and her husband, Nam, avid travelers, have been exploring the flavors of the world, but in particular, the intricacies of Japanese cuisine. Drawing from these experiences and inspiration, Ju-I marries a passion for the freshest ingredients, avant-garde flavors, and a never-ending pursuit of perfection in her atelier, The Backhouse.

Ju-I shines a spotlight on premium fish flown fresh from Japan, pairing them with techniques like dry aging. She tailors flavor profiles to highlight taste and texture, offering a premium sushi experience to the Bay Area.
